Exploring Coffee Processing Methods

Washed (Wet) Process

The washed process is known for producing coffees with bright acidity and clean flavors. After harvesting, the coffee cherries are pulped to remove the outer fruit layer. The beans are then fermented to remove any remaining mucilage before being thoroughly washed and dried. This method often highlights the coffee's inherent qualities and is favored for its clarity and vibrant taste.

Natural (Dry) Process

In the natural process, coffee cherries are dried whole, allowing the bean to absorb flavors from the fruit as it dries. This imparts a rich, fruity sweetness to the coffee, often accompanied by a full body and a hint of wildness. Natural processed coffees are a celebration of the environment they come from, providing a unique and exotic flavor experience.

Honey Process

Somewhere between the washed and natural methods lies the honey process. During this method, the outer skin of the coffee cherry is removed, leaving some of the mucilage intact. This "sticky" mucilage is left on the bean during drying, creating a bridge between the two other methods. The honey process can result in a range of flavor profiles, from delicate and tea-like to syrupy and robust.

Semi-Washed (Pulped Natural) Process

Semi-washed processing strikes a balance between washed and natural methods. After pulping the cherries, some of the fruit's sticky mucilage is left on the bean during drying. This method often produces coffees with a balanced flavor profile, exhibiting both the clarity of washed coffees and the sweetness of natural coffees.
